We are crazy about making and
eating healthy food. For
Sukkot one of our family customs is to make a variety of healthy
cookies to
enjoy with guests in our Sukkah. Want one of Mindy’s vegan and

Kitchen Sink
Cookies
Makes 12 cookies
Dry ingredients
1 cup almond flour
3 Tbsp coconut flour
¼ cup tapioca flour
½ tsp baking soda
¼ tsp cinnamon
Pinch of sea salt or Himalaya salt
Wet ingredients
2 Tbsp ground chia seed or ground
flax seeds mixed
with 8 T of water
2 tsp pure vanilla extract
¼ tsp pure almond extract
¼ cup pure maple syrup (or ½ tsp
pure monk fruit
extract)
2 Tbsp olive oil
Add-Ins
¼ cup raw cocoa nibs
¼ cup raw pecans
¼ cup coconut flakes
¼ cup raisins
1.
Preheat
oven to 180 C.
2.
In a
medium-sized mixing bowl, stir together all the dry ingredients until
well
combined.
3.
Add
the wet ingredients and blend until just combined.
4.
Stir
in your favorite add-ins.
5.
Make
dough balls and place on a parchment lined baking sheet. Flatten each
ball
slightly with the palm of your hand.
6.
Bake
12-13 minutes or until the edges are golden brown.
7.
Place
the baking sheet on a cooling rack until cooled completely.
Store
the cookies in the pantry in an airtight glass container or freeze them
until
ready to eat.
